  • salt and pepper, as needed
  • 3 tbsp. mayonnaise
  • bread crumbs (panko), as needed
  • toasted sesame seeds, as needed

    1 1/2 tbsp. tonkatsu sauce

    1 1/2 tbsp. ketchup

    1 1/2 tbsp. mirin

    2 tsp. sugar

    2 tsp. soy sauce

INSTRUCTIONS

  • Preparation
    Remove any sinew from the chicken tenderloins, cut them into bite-sized pieces, and season with salt and pepper.

    Place the tenderloins and mayonnaise into a plastic bag and massage well to coat the meat.

    Spread an adequate amount of panko bread crumbs on a tray and press the panko onto the meat firmly to coat both sides of the chicken.

    Pour about ½ an inch (1 cm) of oil into a frying pan and heat over medium heat. Pan-fry the chicken until both sides are golden brown and crispy.

    In a separate frying pan, add the (A) ingredients (Worcestershire sauce, tonkatsu sauce, ketchup, mirin, sugar, and soy sauce) and heat for about 1 minute while stirring. Dip the drained chicken cutlets into the sauce to coat.

    Arrange on a plate and drizzle with any remaining sauce, if desired. Sprinkle with toasted sesame seeds.
