- 7 oz canned or boiled bamboo shoots
- 1 boneless chicken thigh (can substitute with chicken breast)
- salt and pepper, to taste
- potato starch (katakuriko), as needed
- vegetable oil, to coat the frying pan
- A2 tbsp. soy sauce
- A1 tbsp. sugar
- A1 tbsp. vinegar
- Achopped green onions, as needed

Cut bamboo shoots into 1/4-inch (5 mm)-thick slices. Cut the chicken into bite-sized pieces and season with salt and pepper. Let sit for a few minutes, then coat with potato starch.- 1
Heat vegetable oil in a frying pan. Add the chicken and cook both sides until browned. Wipe out excess oil from the pan, then add the bamboo shoots and stir-fry together.

Add the combined ingredients from A (soy sauce, sugar, vinegar)and stir-fry until most of the liquid has evaporated. Transfer to a plate and sprinkle with chopped green onions.
