- 4 yellowtail fillets
- 2 tsp. all-purpose flour
- 1/2 tbsp. cooking oil
- Aa pinch of salt
- Aa splash of sake (or dry white wine)
- B1 tbsp. miso paste
- B1 tbsp. sake (or dry white wine)
- B1 tbsp. mirin
- B1 tsp. sugar
- B1 tsp. soy sauce

Sprinkle the yellowtail slices with a pinch of salt and a splash of sake. Let sit for about 10 minutes.

Pat the fillets dry with paper towels and dust both sides lightly with flour.

Heat 1/2 tbsp. of oil in a frying pan. Place the yellowtail in a cold frying pan, then turn the heat to medium. Cook for 3–5 minutes until golden.

Lower the heat. Add the combined miso glaze ingredients B (miso, sake, mirin, sugar, and soy sauce) and simmer until the sauce thickens and glazes the fish.
