INSTRUCTIONS

    Sprinkle the yellowtail slices with a pinch of salt and a splash of sake. Let sit for about 10 minutes.

    Pat the fillets dry with paper towels and dust both sides lightly with flour.

    Heat 1/2 tbsp. of oil in a frying pan. Place the yellowtail in a cold frying pan, then turn the heat to medium. Cook for 3–5 minutes until golden.

    Lower the heat. Add the combined miso glaze ingredients B (miso, sake, mirin, sugar, and soy sauce) and simmer until the sauce thickens and glazes the fish.

・Garnish with white sesame seeds or shiso leaves, if desired.
・A 20 cm (8-inch) frying pan was used in this recipe.
・Sprinkle the fish with salt and rub with sake before cooking to remove any fishy odor. The alcohol evaporates during cooking, taking the smell with it.
