  • 2 eggs
  • 10 1/2 oz firm tofu

    2 tbsp. mentsuyu (3x concentrate)

    1 tbsp. potato starch or cornstarch

    1 tsp. chicken bouillon powder
  • salt, to taste (optional)
  • 1 tsp. vegetable oil (for cooking eggs) (optional)

INSTRUCTIONS

    Prepare the spinach
    Cut the spinach into 1 ½-inch-long pieces. Place in a microwave-safe bowl, cover lightly with plastic wrap, and microwave at 600W for 2 minutes. Rinse under cold water and squeeze out the excess moisture.

    Cook the eggs
    Beat the eggs. Heat 1 tsp. vegetable oil in a skillet over medium heat. Pour in the eggs and cook until softly scrambled. Remove and set aside.

    Make the sauce
    In the same skillet, add all ingredients from section A (water, mentsuyu, mirin, starch, and bouillon). Stir constantly over medium heat until the mixture thickens into a sauce.

    Combine
    Cut the tofu into 6 large pieces and add to the sauce. Once the mixture begins to bubble, gently stir in the spinach and scrambled eggs. Add a pinch of salt for extra flavor, if desired. Serve warm.
