- 1bunch spinach
- 2 eggs
- 294g firm tofu
- A180ml water
- A30ml mentsuyu (3x concentrate)
- A15ml mirin
- A15ml potato starch or cornstarch
- A5ml chicken bouillon powder
- salt, to taste (optional)
- 5ml vegetable oil (for cooking eggs) (optional)

Prepare the spinach
Cut the spinach into 1 ½-inch-long pieces. Place in a microwave-safe bowl, cover lightly with plastic wrap, and microwave at 600W for 2 minutes. Rinse under cold water and squeeze out the excess moisture.

Cook the eggs
Beat the eggs. Heat 1 tsp. vegetable oil in a skillet over medium heat. Pour in the eggs and cook until softly scrambled. Remove and set aside.

Make the sauce
In the same skillet, add all ingredients from section A (water, mentsuyu, mirin, starch, and bouillon). Stir constantly over medium heat until the mixture thickens into a sauce. - 4
Combine
Cut the tofu into 6 large pieces and add to the sauce. Once the mixture begins to bubble, gently stir in the spinach and scrambled eggs. Add a pinch of salt for extra flavor, if desired. Serve warm.
