When scaling the recipe, the ratios of some ingredients may require slight adjustments. Adjust as necessary and season to taste.

  • 1 grapefruit
  • 2 oz smoked salmon
  • 2 lettuce leaves
  • A
    1 tbsp whole grain mustard (or Dijon mustard)
  • A
    0.5 tbsp mango jam
  • A
    0.5 tbsp soy sauce
  • coarse-ground black pepper, to taste

INSTRUCTIONS

    Peel the grapefruit, peel the inside pieces and remove the segments, and place them in a bowl. Cut the smoked salmon into bite-sized pieces. Tear the lettuce by hand.

    In a separate bowl, mix the (A) ingredients (mustard, mango jam, and soy sauce) to make the dressing. Add the lettuce, smoked salmon, and the juice accumulated in the grapefruit bowl, and toss. Sprinkle with coarse black pepper. Add the grapefruit segments and gently mix.
