This recipe blends the popular Japanese technique of tataki (lightly searing the surface of fish, たたき) with elements of Italian carpaccio. Lightly-seared sashimi-grade salmon is paired with a special sauce of garlic-flavored olive oil and lemon in a perfect balance of Japanese tradition and Western flavors.

  • 1 garlic clove
  • 2 tbsp olive oil

  • small green onion (konegi), to taste
  • thin lemon slices, to taste (optional)

    Wipe off any excess moisture from the salmon block. Thinly slice the garlic and then mince.

    Heat the olive oil in a frying pan over low heat. Add the garlic, fry until it turns golden brown, then turn off the heat. Tilt the pan and remove the garlic using a spoon or slotted spoon, leaving the oil in the pan.

    Add the salmon to the frying pan and quickly sear over medium heat. Once the surface is browned, remove the salmon and slice it thinly.

    Transfer the oil remaining in the frying pan to a bowl, add the (A) ingredients (sugar, salt, soy sauce, and lemon juice), and whisk together to make the sauce.

    Arrange the seared salmon and (optional) thin slices of lemon on a plate. Pour the sauce from Step 4 over it and sprinkle with the garlic chips and small green onion.

Tips & Notes

・The seared salmon is prone to falling apart, so use the sharpest knife possible and cut without applying too much pressure.
・Adjust the amount of lemon juice to taste.
