This recipe turns chicken breast into a feast by coating it in a rich citrus-soy sauce glaze enriched with creamy Japanese mayonnaise, then topping it generously with chopped green onions. The moist and tender chicken breast pairs beautifully with the rich and savory sauce.

When scaling the recipe, the ratios of some ingredients may require slight adjustments. Adjust as necessary and season to taste.
- 10 oz chicken breast
- 3 small green onions
- A1 tsp sugar
- A1 tsp sake (or white wine)
- A1 tsp soy sauce
- 2 tbsp potato starch (katakuriko, or cornstarch)
- 2 tbsp vegetable oil
- B1.5 tbsp Japanese mayonnaise
- B1.5 tbsp ponzu (citrus-seasoned soy sauce)
- B0.5 tsp sugar
- B0.5 tsp grated garlic (or paste from a tube)
INSTRUCTIONS

Butterfly the chicken breast, pierce it thoroughly with a fork, and slice it thinly on the diagonal into bite-sized pieces. Place it in a plastic bag, rub in the (A) ingredients (sugar, sake, and soy sauce), and then add the potato starch and massage into the chicken.

Slice the small green onions. Mix the (B) ingredients (mayonnaise, ponzu, sugar, and garlic) together in a small bowl.

Heat 2 tbsp. of vegetable oil in a frying pan. Add the chicken, fry over medium heat for about 3 minutes, flip, and fry for another 2–3 minutes. Wipe out any excess oil, reduce to low heat, add the mixed (B) ingredients, and quickly toss to combine. Remove from the heat.

Plate and sprinkle with the small green onions.
