Surprisingly easy, but professional-quality flavor!
This luxurious dessert features a bottom layer of fluffy, silky mousse topped with a decadent strawberry sauce. Using in-season strawberries maximizes the natural strawberry flavor! When scaling the recipe, the ratios of some ingredients may require slight adjustments. Adjust as necessary and season to taste.
- 9 oz strawberries
- A3 tbsp. granulated sugar
- A1 tsp. lemon juice
- B1 tbsp. water
- B1 tsp. powdered gelatin
- C3/4 cup and 1 1/3 tbsp. heavy cream
- C3 tbsp. granulated sugar
- 7 oz plain, unsweetened yogurt
- mint leaves, for garnish (optional)
INSTRUCTIONS

Reserve 4 strawberries for the topping. Remove the stems from the remainder of the strawberries and cut them in half lengthwise. Place them in a microwaveable bowl, sprinkle with the (A) ingredients (sugar and lemon juice), cover loosely with plastic wrap, and heat in a 600W microwave for 2 minutes and 30 seconds.

Remove from the microwave and crush the strawberries with a whisk, then mix well.

Combine the (B) ingredients (water and gelatin) in a microwaveable container, cover with plastic wrap, and heat in a 600W microwave for 20 seconds.

Whip the (C) ingredients (heavy cream and sugar) in a bowl until stiff peaks form. Gradually add the plain yogurt, mixing as you go. Add 4 tbsp. of the juice from Step 2 (try to avoid including the pulp), and then the gelatin mixture from Step 3, mixing after each addition.

Divide the mixture equally into glasses, cover with plastic wrap, and chill in the refrigerator for about 2 hours until set.

Drizzle the remaining mixture from Step 2 over the mousse, garnish top with the remaining strawberries, and garnish with mint leaves, if desired.
