- 4 swordfish fillets (about 14–16 oz. total)
- salt and pepper (to taste)
- potato starch or cornstarch (as needed)
- 1 tsp. vegetable oil
- 1 1/2 tbsp. unsalted butter
- freshly-ground black pepper (to taste)
- A1 tsp. sake (or dry white wine)
- A1 tsp. mirin
- A2 tsp. miso paste
- A1/2 tsp. soy sauce

Prepare the fish:
Pat the swordfish dry with paper towels. Lightly season both sides with salt and pepper. In a small bowl, combine the ingredients from A (sake, mirin, miso, soy sauce) to make the miso glaze.

Coat and sear:
Lightly dust the fish with potato starch. Heat vegetable oil in a skillet over medium and sear the fillets until golden on one side.

Glaze and steam:
Flip the fillets, reduce to low heat, and pour the miso glaze over them. Cover with a lid and cook gently until the fish is cooked through.

Finish and serve:
Cut the butter into small pats and place one on top of each fillet. Let the butter melt slightly, then transfer to a plate and sprinkle with freshly ground black pepper to taste. Serve hot with steamed rice.
