- 1 /6 of a head of cabbage (roughly chopped)
- 2 tbsp. potato starch or cornstarch
- 1 tbsp. vegetable oil
- Ground black pepper (to taste)
- A2 tsp. sake (or dry white wine)
- A1 tsp. soy sauce
- A1 tsp. garlic paste
- A1 tsp. ginger paste
- ASalt and pepper (to taste)
- B1 tbsp. awase miso (or your preferred miso paste)
- B2 tsp. Japanese mayonnaise
- B2 tsp. sake
- B1 tsp. sugar
- B1/2 tsp. soy sauce

Cut the chicken into bite-sized pieces. Place in a resealable plastic bag with ingredients from group A (2 tsp. sake, 1 tsp. soy sauce, garlic, ginger, salt, and pepper). Massage well, then add the starch and coat evenly. Roughly chop the cabbage.

Heat vegetable oil in a skillet over medium heat. Add the chicken and cook for 5–6 minutes until golden brown. Wipe out any excess oil with a paper towel, then add the cabbage. Stir-fry for about 2 minutes until slightly wilted.

Add the mixed ingredients from group B (miso, Japanese mayonnaise, 2 tsp. sake, sugar, and ½ tsp. soy sauce) and toss quickly until just coated. Sprinkle with black pepper to finish.
