- 336g thinly-sliced pork loin
- 60ml all-purpose flour
- 30ml vegetable oil
- A15ml Japanese mayonnaise
- A15ml sake (or dry white wine)
- A7.5ml soy sauce
- A5ml garlic paste or minced garlic
- ASalt and pepper (to taste)
- B30ml awase miso (or your preferred miso paste)
- B30ml mirin
- B15ml soy sauce
- B15ml sake
- B10ml sugar
- B2.5ml garlic paste or minced garlic

Place the pork in a bowl and add all A ingredients (Japanese mayonnaise, 1 tbsp. sake, ½ tbsp. soy sauce, ½–1 tsp.garlic, salt, and pepper). . Mix well and let marinate for about 10 minutes.

While marinating, mix all the B ingredients ( miso, mirin, 1 tbsp. soy sauce, 1 tbsp. sake, sugar, and ½ tsp. garlic) in a separate bowl to make the garlic miso sauce.

After marinating, coat each pork slice lightly with flour.

Heat vegetable oil in a skillet over medium heat. Add pork slices one by one, spreading them out evenly to avoid overlapping.

Cook until both sides are browned. Then pour in the garlic miso sauce (B) and stir to coat the pork evenly. Simmer briefly until the sauce thickens slightly and coats the pork.
