- 7 oz sliced pork
- 2 cup raw mung bean sprouts
- 2 tbsp. potato starch or cornstarch
- 1 tbsp. sesame oil
- A1 tbsp. sake (or dry white wine)
- A1/2 tbsp. soy sauce
- ASalt and pepper (to taste)
- B2 tbsp. sake
- B1 tbsp. oyster sauce
- B1 tbsp. awase miso (mixed red & white miso)
- B1 tbsp. mirin
- B1/2 tbsp. sugar
- B1 tsp. doubanjiang (chili bean paste; optional)

Cut the pork into bite-sized pieces. Place in a bowl or zip-top bag with A ingredients (sake, soy sauce, salt, and pepper). Mix and let marinate for about 5 minutes. Meanwhile, combine the B ingredients (sake, oyster sauce, miso, mirin, sugar, and doubanjiang) to make the sauce.

Add starch to the bag with the marinated pork and mix until evenly coated.

Heat sesame oil in a frying pan over medium heat. Add the pork, separating the pieces as you stir-fry.

Once the pork is cooked through, add the bean sprouts and quickly stir-fry.

Pour in the sauce (B), stir to coat everything evenly, and cook briefly—just enough to blend the flavors without reducing the sauce too much.
