  • All-purpose flour, as needed
  • 1 egg, beaten
  • Panko breadcrumbs, as needed
  • 4 tbsp. vegetable oil

INSTRUCTIONS

    Butterfly the chicken breast and cut it in half lengthwise. Pound each piece with a plastic-wrapped rolling pin until less than 1/2 inch (1 cm) thick. Season both sides with salt and pepper.

    Dredge the chicken in flour, dip in beaten egg, and coat evenly with breadcrumbs.

    Heat vegetable oil in a frying pan over medium heat. Add the chicken and fry until golden and crispy on both sides, about 5 minutes per side. Remove from the pan and rest on a rack for 5 minutes to allow the juices to settle.

    Combine all (A) ingredients (ketchup, Worcestershire, mirin, and butter) in a microwave-safe bowl. Microwave (600W) for 1 1/2 minutes, then stir well until smooth.
