A cozy homemade chicken stew made with tender chicken breast, potatoes, carrots, and onions — rich, creamy, and full of warmth.
Pan-searing the chicken before simmering keeps it juicy and flavorful, while the creamy sauce brings everything together perfectly.
This lighter version using chicken breast is easy on the stomach, yet deeply satisfying. A comforting dish that’s perfect for chilly days!

- 10 1/2 oz chicken breast
- 2 potatoes
- 1 /2 onion
- 1 /2 onion
- Salt and pepper, to taste
- 1 tbsp. all-purpose flour (for chicken)
- 1 tbsp. vegetable oil
- 2 tsp. butter
- 1 1/2 tbsp. all-purpose flour
- 3/4 cup water
- 1 1/4 cup milk
- 2 tsp. chicken bouillon granules
- Additional salt and pepper, to taste
- Dried parsley, for garnish
INSTRUCTIONS
- 1
Slice the chicken breast in half lengthwise, then cut diagonally into bite-sized pieces. Place in a plastic bag with salt, pepper, and 1 tbsp. flour, and shake to coat evenly. Cut the potatoes into bite-sized pieces, slice the onion into wedges, and cut the carrot into small, irregular pieces.

- 2
Add the potatoes and carrots to a microwave-safe bowl, splash with a little water, cover loosely with plastic wrap, and microwave (600W) for 5 minutes.
- 3
Heat vegetable oil in a frying pan over medium heat. Add the chicken and cook for 4–5 minutes until golden. Remove and set aside.

- 4
In the same pan, add the vegetables and sauté for 3–4 minutes. Add butter and stir until melted. Sprinkle in 2 1/2 tbsp. flour and mix well to coat the vegetables evenly. Gradually add the water while stirring to create a smooth base.

- 5
Slowly add the milk in several additions, stirring constantly to prevent lumps. Once smooth, bring to a gentle boil. Return the chicken to the pan, add bouillon, and season with salt and pepper. Simmer over low heat for 5–6 minutes, stirring occasionally, until thick and creamy.

- 6
Ladle into bowls and sprinkle with dried parsley to finish.
