- 1 /2 pack shimeji mushrooms
- 1 /2 onion
- 1 tbsp. all-purpose flour
- Salt and pepper, to taste
- 2 tsp. butter
- 1 tsp. garlic paste
- 1 /2 can diced tomatoes
- 2 tsp. ketchup
- 2 tsp. mirin
- 1 tsp. soy sauce
- 1/2 tsp. chicken bouillon granules
- 8 tbsp. shredded mozzarella or pizza cheese
- Black pepper, for garnish

Slice the chicken breast in half lengthwise, then cut diagonally into bite-sized pieces. Place in a plastic bag with flour, salt, and pepper, and shake to coat evenly. Cut the onion into wedges and separate the shimeji mushrooms.

Melt the butter in a frying pan over medium heat. Add the chicken and cook for 4–5 minutes until lightly browned. Add the onion, mushrooms, and garlic, and stir-fry for 1–2 minutes until fragrant.

Add the diced tomatoes, ketchup, mirin, soy sauce, and bouillon. Bring to a gentle boil over medium heat and simmer for about 3 1/2 minutes, stirring occasionally.

Sprinkle cheese evenly on top. Cover with a lid and cook until the cheese is melted. Finish with a sprinkle of black pepper and serve warm.
