- 3 salmon fillets
- a pinch of salt
- 1 tbsp. sake
- salt and pepper (to taste)
- all-purpose flour (as needed)
- 1 tbsp. vegetable oil
- 1 /2 shimeji mushrooms
- 1 /2 enoki mushrooms
- 1 tsp. sesame oil
- A2/3 cup water
- A3 tbsp. mentsuyu (2x concentrate)
- A1/2 tbsp. potato starch (or cornstarch)
- A1 tbsp. water (for slurry)
- Akaiware(optional, for garnish) (daikon sprouts)
INSTRUCTIONS
Preparation
Sprinkle salmon fillets with a pinch of salt and sake. Let sit briefly, then pat dry with paper towels.

Remove the stem ends from the shimeji and enoki mushrooms. Separate into small pieces. If using frozen mushrooms, no need to thaw.

In a small pan, heat sesame oil over medium heat. Add mushrooms and sauté until tender.

Add (water and mentsuyu and bring to a boil. Turn off the heat. In a small bowl, mix starch and 1 tbsp. water to make a slurry. Stir it into the sauce to thicken.

Lightly season the salmon with salt and pepper, then dust with flour on both sides.

Heat vegetable oil in a frying pan over medium-high heat. Cook salmon for about 2–2 ½ minutes per side until golden brown and cooked through.

Plate the salmon and pour the mushroom sauce over the top. Garnish with kaiware if desired.

Straight type: 6 tbsp. mentsuyu + 100 ml water
3x concentrate: 2 tbsp. mentsuyu + 160 ml water
4x concentrate: 1.5 tbsp. mentsuyu + 160 ml water
