This easy rice bowl made with ground pork and eggplant is seasoned with a sweet and savory sauce that’s absolutely irresistible.

- 7 oz ground pork
- 1 medium eggplant, diced into 1/2-inch pieces
- 1/2 tbsp. sesame oil
- 1 tsp. grated garlic (or paste)
- 1 tsp. grated ginger (or paste)
- 2 servings cooked white rice
- 2 egg yolks (optional)
- Chopped scallions, to taste
- Toasted white sesame seeds, to taste
- A2 tbsp. soy sauce
- A2 tbsp. mirin
- A1 tbsp. sugar
- A1 tbsp. sake (or dry sherry as a substitute)
- ASalt and pepper, to taste
INSTRUCTIONS

Dice the eggplant into 1/2-inch (1 cm) cubes and soak in water for 10 minutes to remove bitterness. Drain and pat dry with paper towels.

In a skillet, heat the sesame oil over medium heat. Add the garlic, ginger, and ground pork. Sauté until the pork is well browned.

Add the eggplant and continue to cook for 3–4 minutes until tender.

Add all ingredients from A (soy sauce, mirin, sugar, sake, salt, and pepper) and simmer for about 2 minutes, stirring occasionally, until the sauce thickens and coats the meat and eggplant.

Serve over hot rice. Top with a raw egg yolk if desired, and garnish with chopped scallions and sesame seeds.
