- 10 oz chicken breast
- 2 fried eggs
- 2 lettuce leaves
- 1 tsp. grated garlic
- 1 tsp. grated ginger
- 2 tsp. sake
- 3 tbsp. potato starch
- 3 tbsp. vegetable oil
- Salt and pepper, to taste
- Cooked rice, as needed
- Mayonnaise, to taste
- A1 tbsp. soy sauce
- A1 tbsp. sake
- A1 tbsp. mirin
- A2 tsp. ketchup
- A1 tsp. sugar
- A1 tsp. curry powder

Prepare the fried eggs ahead of time.

Cut the chicken breast in half lengthwise, then slice into bite-sized pieces on the diagonal. Place in a zip-top bag with garlic, ginger, sake, salt, and pepper. Massage well, then add potato starch and mix until evenly coated.

Heat the vegetable oil in a frying pan over medium heat. Add the chicken and cook both sides until golden brown, about 6 minutes total.

Wipe off excess oil in the pan with paper towels. Add all A ingredients (soy sauce, sake, mirin, ketchup, sugar, and curry powder) to the pan and cook until the sauce thickens and evenly coats the chicken.

In a serving bowl, layer rice, lettuce, curry chicken, and a fried egg. Finish with a drizzle of mayonnaise.
