- 1 Japanese long green onion (or substitute with 1/2 of a medium onion), sliced diagonally

- A3 tbsp. soy sauce
- A2 tbsp. sugar
- A1 tbsp. mirin
- A1/2 tsp. Hondashi (bonito soup stock granules)

Simmer the beef and vegetables
In a small (9-inch) skillet, combine all the Sukiyaki sauce ingredients from A (water, soy sauce, sugar, mirin, and Hondashi) and bring to a simmer over medium heat. Add the beef and onions. Simmer for 4–5 minutes until the beef is cooked through and the flavors come together.

Add the eggs
Pour the beaten eggs over the beef mixture. Let cook for about 15 seconds, then turn off the heat. Cover with a lid and let it rest for about 1 minute to gently finish cooking the eggs.

Assemble the bowl
Place steamed rice into bowls. Spoon the beef and egg mixture over the top. Serve hot.
