- 1 potato, peeled and cut into 1/4-inch half-moons
- 1 /4 onion, thinly sliced
- 1 /4 carrot, thinly sliced into half-moons
- 1/2 tbsp. olive oil
- 2 tbsp. awase miso (mixed miso)
- Freshly-ground black pepper, to taste
- 1 2/3 cup water
- 1 tsp. dashi granules (such as Hondashi)

Prepare the vegetables: Peel the potato and slice it into 1/4-inch half-moons. Thinly slice the onion. Slice the carrot into thin half-moons.

In a small saucepan, heat the olive oil over medium heat. Add the vegetables and sauté for 2–3 minutes.

Add all ingredients from group A (water and dashi) and bring to a boil. Simmer for 3–4 minutes until the vegetables are tender. Turn off the heat.

Stir in the miso until fully dissolved. Pour into bowls and finish with a dash of freshly-ground black pepper. Serve warm.
