- 7 oz firm tofu
- 2 oz enoki mushrooms
- 2 oz shimeji mushrooms
- 2 stalks komatsuna (Japanese mustard spinach), or substitute with spinach or Swiss chard
- salt and pepper, to taste
- all-purpose flour, as needed
- 1/2 tbsp. vegetable oil
- 1 tsp. potato starch (can substitute with cornstarch), dissolved in 2 tsp. water
- A4 tbsp. water
- A1 tbsp. mentsuyu (2x concentrate)
- A1 tbsp. sake
- A1 tbsp. mirin
- A1 tsp. soy sauce

Trim the roots off the enoki mushrooms and cut in half. Trim the base off the shimeji mushrooms and separate into small clusters. Boil the komatsuna for about 1 minute, then cool in cold water and cut into 1-inch pieces.

Wrap the tofu in paper towels and microwave on a heatproof plate at 600W for 2 minutes. Cut into 4 equal pieces. Pat dry with fresh paper towels, then season with salt and pepper and lightly coat with flour.

Heat vegetable oil in a frying pan over medium heat. Add the tofu and pan-fry for 2–3 minutes until golden on all sides. Transfer to a serving plate.

In the same pan, sauté the mushrooms for about 2 minutes. Add all ingredients from A (water, mentsuyu, sake, mirin, and soy sauce) and bring to a boil. Stir in the starch slurry and mix gently until thickened. Pour the sauce over the tofu, and serve with the drained komatsuna on the side.
