- 1 /2 pack enoki mushrooms
- 2/3 cup kimchi
- 1/2 tbsp. sesame oil
- 1/2 tsp. grated garlic
- 1/2 tsp. grated ginger
- A1 3/4 cup water
- A1 tbsp. sake (or dry white wine)
- A1 tbsp. mirin
- A1 tbsp. miso paste
- A1 tbsp. ground sesame seeds
- A2 tsp. gochujang (Korean chili paste)
- A1 tsp. sugar
- A1 tsp. chicken bouillon powder
- Asalt and pepper, to taste

Trim the root from the enoki mushrooms and break into small clusters. Cut into 1-inch pieces. Chop the kimchi into bite-sized pieces.

In a small pot, heat sesame oil over medium heat. Add the garlic, ginger, enoki mushrooms, and kimchi. Lightly sauté until fragrant.

Add all ingredients from group A (water, sake, mirin, miso, sesame seeds, gochujang, sugar, bouillon, salt, and pepper) and bring to a boil. Use a spoon to scoop chunks of silken tofu into the pot. Simmer for 2–3 minutes.

Serve hot, optionally with a side of steamed rice.
