When scaling the recipe, the ratios of some ingredients may require slight adjustments. Adjust as necessary and season to taste.

- 2 pinches salt
- 2 tbsp. sake
- 1/2 tbsp. vegetable oil
- 2 shiso leaves (optional)
- 1 /8 daikon radish, grated and lightly squeezed (optional)
- soy sauce, to taste (optional)

Score the skin side of each mackerel fillet with two shallow diagonal cuts. Sprinkle with salt and pour sake over the fillets. Let sit for 5 minutes, then pat dry with a paper towel.

Heat vegetable oil in a frying pan. Place the mackerel skin-side down and cook over medium heat for 3 minutes. Once nicely browned, flip over and cover with a lid. Steam over low heat for 4 minutes.

Plate and garnish with shiso leaves and grated daikon if available. Drizzle with a small amount of soy sauce, if desired, and serve.
