  • Salt and ground black pepper, to taste
  • 4 tbsp. potato starch (adjust based on meat size)
  • 3 tbsp. oil (vegetable or canola)

    2 tbsp. cooking sake (or dry white wine)

    2 tbsp. sugar

    1 1/2 tbsp. soy sauce

  • Preparation
    Score the edges of the pork chops to prevent curling. Rub both sides with salt and pepper.

    Place potato starch into a plastic bag. Add one pork chop at a time, seal, and shake to coat evenly. Repeat until all of the pork chops are coated.

    Heat oil in a frying pan. Add the pork chops and cover with a lid. Cook until one side is golden and crisp. Flip, cover again, and cook over low heat for 1 minute.

    Remove the lid and wipe off excess oil with a paper towel. Add all ingredients from A (vinegar, cooking sake, mirin, sugar, and soy sauce), cover again, and cook for 2–3 minutes. Flip halfway through to coat both sides in the sauce.

    Be careful not to use high heat, or the sauce may evaporate and burn.

Tips & Notes

Be sure to score the pork loin slices to prevent them from curling or breaking during cooking.
When coating with potato starch, add the pork to the bag one slice at a time and shake thoroughly. This prevents the slices from sticking to one another and ensures an even coating.
