When scaling the recipe, the ratios of some ingredients may require slight adjustments. Adjust as necessary and season to taste.
- 5 oz ground pork
- 10 oz tofu (silken or firm)
- 2 bowls cooked rice
- 2 tsp. cornstarch
- 3 tbsp. water
- 2 tbsp. mentsuyu (3x concentrated)
- 2 tbsp. sake
- 2 tbsp. mirin
- 1 tsp. soy sauce
- 1 tsp. sugar
- 1 tsp. oyster sauce
- 1/2 tsp. grated ginger
INSTRUCTIONS

In a saucepan, combine ground pork and all ingredients from A (water, mentsuyu, sake, mirin, soy sauce, sugar, oyster sauce, and ginger). Heat over medium, stirring occasionally until the pork is cooked through.

Once the pork changes color, crumble the tofu into the pot by hand. Simmer for about 3 minutes.

Reduce heat to low or turn off the heat. Mix together 1 tbsp. water with 2 tsp. cornstarch in a small bowl, then pour into the pot while gently stirring. Increase the heat to medium and cook until the sauce thickens.

Tips & Notes
You can substitute ground chicken (thigh or breast) for ground pork.
Oyster sauce can be omitted. If substituting, increase the soy sauce and sugar slightly and add a pinch of chicken bouillon if available.
If using 2x concentrated mentsuyu, use 3 tbsp.
If using 4x concentrated mentsuyu, use 1 1/2 tbsp.
A 6-inch (16 cm) saucepan was used in this recipe.

Tasty but needs some tweaks.
This was nice but lacked a bit of kick. Next time I would increase the ginger and add salt during the cooking process. Also some MSG might help. Could also benefit from chilli crisp just before serving. Perhaps brown the pork mince first in order to drain the fat, before adding the rest of the ingredients. All in all a good recipe that is quick to prepare and quite tasty.
