- 1 /2 Japanese long onion
- 3 1/2 oz thinly-sliced pork belly
- 5 1/4 oz firm tofu
- A1 2/3 cup water
- A1 tbsp. chicken bouillon powder
- A1 tsp. soy sauce
- Aa pinch of salt
- A1 tsp. grated garlic (or garlic paste)
- A1 tsp. grated ginger (or ginger paste)
- A7.5 toasted sesame oil
- Atoasted white sesame seeds, to taste
- Afreshly-ground black pepper, to taste

Slice the Japanese long onion into thin, diagonal pieces.

Heat sesame oil in a saucepan over medium heat. Add the onion and sauté until softened. Add ingredients from group A (water, chicken bouillon powder, soy sauce, salt, garlic, and ginger).

Once the broth reaches a boil, add the pork belly slices and crumbled tofu. Simmer for 2–3 minutes. Finish with sesame seeds and freshly-ground black pepper to taste.

Japanese long onions can be substituted with yellow onions.
Pork belly slices can be replaced with sliced pork loin or pork shoulder.
Firm tofu can be substituted with silken tofu.
Sesame oil can be replaced with neutral oil.
Grated garlic and ginger can be omitted if desired.
Crumbling the tofu by hand allows it to better absorb the soup’s flavor.
