- 3 tbsp. mentsuyu (3x concentrated)
- 1/2 tsp. grated ginger
- 1 tsp. sesame oil
- chopped green onion (optional, for garnish)

Cut the shaved pork belly into bite-sized pieces if necessary. Peel the daikon and slice into half-moon-shaped pieces about 1/8–3/16 inch (3–4 mm) thick.

Heat the sesame oil in a skillet over medium heat. Add the pork and stir-fry until it is mostly cooked (about 80%).

Add the sliced daikon and stir-fry for another 2–3 minutes.

When the daikon edges start to turn translucent, add the water, mentsuyu, and ginger. Bring to a boil, then cover with a drop lid (otoshibuta). You can use parchment paper or a sheet of paper towel as a substitute. Simmer for 10 minutes.
