This easy one-pan dish is made with in-season broccoli and smoky bacon, tossed with fluffy scrambled eggs. It’s great not only as a side dish or in bento lunches, but also served over rice or on toast for a light meal. Three key tips for fluffy eggs:
1. Add Japanese mayonnaise to the egg mixture
2. Use enough oil when cooking
3. Heat the pan thoroughly before scrambling
