- 1tsp salt (for the "Itazuri" salt rub)
- A2/3cup water (150ml)
- A3tbsp shiro dashi (Japanese white soup base)
- A1tsp wasabi paste

Sprinkle salt over the okra on a cutting board. Gently roll them back and forth with your palms. (Itazuri, 板摺り) Rinse the salt off under running water.
Trim the stem and peel off the hard edge (calyx) around the top. Poke a few holes in each okra pod with a fork to help the marinade soak in.

Place the okra in a microwaveable container, cover lightly with plastic wrap, and microwave (600W) for about 3 minutes until just tender. Let cool slightly.

In a bowl, whisk together water, shiro dashi, and wasabi paste (A) until well combined.

Add the marinade to the slightly cooled okra. To ensure they marinate evenly, press a piece of plastic wrap directly onto the surface of the liquid. Chill in the refrigerator for at least 1 hour before serving.
