- 8 oz boneless chicken thigh (cut into bite-sized pieces)
- 1 Japanese long onion (cut into 2-inch pieces)
- 1 tbsp. vegetable oil
- A2 tbsp. sugar
- A2 tbsp. soy sauce
- A1 tbsp. sake (or dry white wine)
- A1 tbsp. mirin

Heat vegetable oil in a skillet over medium heat. Add the chicken and long onion pieces in a single layer. Once browned, flip them over, cover with a lid, and steam over low heat for 4 minutes.

Remove the lid and blot excess fat and moisture from the pan with a paper towel.

Return to medium heat and add all the sauce ingredients A (sugar, soy sauce, sake, and mirin). Simmer until the sauce thickens and evenly coats the chicken and onions.
